The grapes are picked by hand and immediately cold-pressed with a very flexible programme allowing only the best to be taken.After fermentation, the wine is cooled and stirred by hand for 2 months to keep the lees in suspension. When winter arrives, the door where the vat is located is opened to drop the tartaric acid and the wine is then bottled without filtration or any other treatment at the end of the winter.Very flowery and fruity on the nose, the wine is lively and dry on the palate. Beyond the summer aperitif, it will accompany fish and seafood.The gastro rosé par excellence.
