Kissed by soft sea breezes from the Mediterranean, the vineyards of Bijou yield perfectly ripened Grenache, Cinsault and Rolle grapes which are used in the creation of Éminence, a pale pink rosé from Languedoc. Harvested early in the morning, pressed gently and cold fermented for texture, this wine shows complexity with tones of raspberry and redcurrant and a hint of vanilla from the oak barrels used in the fermentation of the Grenache varietal. With or without food, Éminence is a delight.
